This is not my recipe but was given to me by my friend and personal trainer, Sarah. I have not made them yet, but I have tried the ones she has made and they are delicious. I am a borderline diabetic, and I control my blood sugar through diet, not prescriptions. I would substitute either almond flour or coconut flour for the oat flour in this recipe.
Homemade Chocolate Protein Bars
- 1 cup Oat Flour (I put about 1.25 cups of old fashioned oats in my blender and make it! Cheap and easy)
- 4 Egg Whites
- 2 scoops Vanilla Whey Protein Powder (I use chocolate, and it still works well).
- ½ cup Baking Truvia
- ½ tsp Baking Soda
- ¼ tsp Salt
- 8oz Apple Sauce
- 1 tsp. vanilla (optional)
- 3 tbsp Baking Cocoa
- 4oz Water
You can get creative with it and add stuff like pb chips, cinnamon, raw walnuts, coconut, etc.
Preheat oven to 350 degrees.
Mix dry ingredients (oat flower, vanilla whey protein, baking soda, salt, baking cocoa) together in a large bowl.
Mix wet ingredients (egg whites, Truvia, Apple Sauce,Water) together in a medium sized bowl.
Add wet ingredients to dry ingredients and mix together.
Spray cooking dish with a non stick butter spray and add batter to dish.
Bake 20-30 minutes in oven.
Makes 16 squares.
Serving size is 2 squares at 95 calories, 1.5g fat, 12g, carbs, and 10g protein 🙂
