Fluffy Buttermilk Pancakes

Ingredients

  • 3 cups unbleached all-purpose flour
  • 3 tablespoons organic sugar or honey
  • 3 teaspoons aluminum-free baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 cups organic buttermilk
  • 1/2 cup organic milk
  • 3 organic, cage-free eggs, lightly beaten
  • 1/3 cup organic butter, melted

Heat your griddle to 375 degrees and lightly butter.  If you are using a skillet, it is ready when water droplets spatter and sizzle.

Whisk together dry ingredients.  Beat together buttermilk, milk, eggs and melted butter.  Add to try ingredients and stir with a wooden spoon until just blended.  Be careful not to overmix.  Batter will be lumpy.

Ladle batter onto hot griddle.  Pancakes are ready to flip when the edges begin to look dry.  Cook until golden brown on each side.  Butter them while they are hot and serve with honey or warm organic syrup.

It is important to use aluminum free baking powder in all recipes. Aluminum has been linked to dementia and Alzheimer’s Disease.   Don’t knowingly consume it.  It is also important to use organic, cage free eggs which are much healthier than mass produced eggs from tortured chickens. Organic, cage free eggs do not affect cholesterol in the same way as mass produced eggs.  The same goes for dairy products.  You should always avoid consuming antibiotics and synthetic hormones whenever possible.  I’ll write more on these topics later.
